Cooks Corner - Taco Salad

Hey Y’all!!

I hope you’re all enjoying Cook’s Corner as much I as I am! Cooking has always been one of my great passions in life, and I’ve always enjoy helping others with their cooking as well! Knowing that cooking doesn’t always come easy to everyone, I really try to keep it simple. Also, I know that personally we have a lot going on with our 3 kiddos, our urban homestead (where we have 25 meat bird chicks that are 3 weeks old and we’re expecting our next 25 in a week or so), not to mention we homeschool our kids and my wife and I have 3 businesses!

So I totally understand your busy lives and want the Cook’s Corner to be a help to you and your family. That being said, I also want y’all to share your yummy recipes! Why?? Because that’s what families do! 😁

Today we are using some of that delicious DCR Hamburger meat!! So let’s dig right in!

Taco Salad!!! YUM!! And healthy!

I used 2 packages of hamburger meat, it made enough for salads for all 5 of us (3 of us are smaller), and there was plenty left over for a few more salads through the week.

First I brown my meat seasoning it with Taco Seasoning.

I personally don’t use a pre-mixed, I just sprinkle in the following to taste: sea salt, black pepper, chili powder, onion powder, garlic powder, cumin powder, paprika, oregano. I like to add fresh ingredients, so I grabbed some chives and garlic greens from the garden, chopped those up and cooked it all together.

Let the browned meat cool a bit so it doesn’t wilt the salad.

Then I start on the salad:

Romaine lettuce

Tomatoes

Red Bell pepper

Fresh chives

Feel free to add any other veggies you like!

Top the salad with the slightly cooled taco meat, shredded cheese and sour cream. We use homemade salsa instead of a dressing. You could definitely serve some tortillas chip along side or mixed in!

Hope y’all enjoy this one!!

Your Cook,

Craigan
