IF YOU ORDER A 1/2 (BEEF, LAMB, PORK,) OR WHOLE - YOU CAN PERSONALIZE YOUR CUTTING PREFERENCES.

Quarter Animal Standard Cutting List (Weights and quantities differ from animal to animal) Roasts; ~3lbs - Steaks; 3/4", 2 per pack, standard

  • 3-6 chuck roasts

  • 3 – 4 packages of shortribs

  • 3-6 london broil

  • 1-2 bottom round roast

  • 1 sirloin tip roast

  • 1 brisket

  • 2-4 packages of sirloin steaks

  • 2-4 packages of T-Bone steaks

  • 1-2 packages of Tenderloin steaks 

  • 3-6 packages of Rib steaks

  • 2 packages of round steaks

  • 1 tri-tip

  • neck bones, skirt steak, flank steak

  • Approximately 10 – 20 packages of hamburger in 1.5-2lb packages

ACTUAL CUT & QUANTITIES VARIES FROM BOX TO BOX

  • 1-2 packages of shoulder steaks

  • 6-7 packages of pork chops

  • 2 packages of spare ribs

  • 1 package of fresh side (un-cut bacon that is not cured or smoked)

  • 1-2 fresh ham (not cured or smoked)

  • 2-4 packages of ham steaks

  • 2 packages sirloin chops

  • 6-9 packages of ground pork 

Please call in instructions to butcher, when notified by us, if you would prefer ground pork in place of sausage mix. ​
