Caramelized Onions - Customer Recipe

I start with about 2 lbs of chopped, sweet onions.


In my skillet I melt about ½ stick of butter or enough oil to moisten all the onions.  Butter just seems to be the best for me.


I add salt, pepper and a few pepper flakes.


“Low” (temperature) and “Slow” (about 1.5 to 2 hours) is how to bring out the sugar, naturally found in the onions. 


My kitchen and living room are a great rooms so I put on a movie while I prepare the onions.


I set my timer for 6 minutes and turn the onions.


  I do this every 6 minutes until they start to show some color. 


Then, I shorten the time between turning, 5 minutes, then 4 minutes, finally about every 3 minutes.  We like them brown and a little black. 

We add the caramelized onions to our Date Creek Ranch steaks and burgers and it really enhances the flavor!
