BEEF. We sell our beef by the quarter. Price is $ 4.50 per pound hanging weight (Hwt) across all cuts. Typically quarters are between 100 and 140 pounds Hwt. Hwt is the carcass weight before dry aging. Package weight is approximately 25% lower than Hwt depending on the amount of fat. Depending on the size of the quarter, cost is between $450 - $600(includes cost of processing). We guarantee our meat.
PORK. We sell by the quarter animal at $3.90/pound hanging weight. A quarter will be about 45 pounds (hanging weight) of meat and will, depending on the size of the animal, cost around $180 (this includes processing). A quarter will follow a standard cutting list. If you want to use your own cutting instructions, then you may want to order a half. For those of you who want smoked ham and bacon (for an extra charge), you must buy a whole animal.
