We sell our beef by the quarter. Price is $ 4.50 per pound hanging weight (Hwt) across all cuts. Typically quarters are between 100 and 140 pounds Hwt. Hwt is the carcass weight before dry aging. Package weight is approximately 25% lower than Hwt depending on the amount of fat. Depending on the size of the quarter, cost is between $450 - $600(includes cost of processing). We guarantee our meat.
